No Chopping Vegetable Stir Fry

I am eating stir fry in the morning to get more veggies in my body.  I do not like to peel and chop so this is my solution.  You need to stock the following:

  • frozen chopped onion
  • minced jarred ginger
  • frozen peas
  • broccoli slaw
  • carrot slaw
  • raw cashews
  • *any frozen veggie will do

Saute onions in ghee until translucent.  Add minced ginger, cashews, broccoli and carrot slaw and frozen peas.  Continue to saute until veggies are tender.  Add already cooked wild rice and saute until flavors mix.  Serve with one half chopped avocado and a splash of wheat free tamari.

Because I use wild rice instead of white rice this makes this a very hearty dish.  The protein and the fiber are higher as well.  Check out the nutrition info of wild rice here.
